So is there a reason why we don't refer to these elements in the IPFIX RFC?
Do I have to read both the specs, to filter out all what's possible?

The reporting of selector parameters and statistics using Options is 
specified in the PSAMP protocol. See:
http://tools.ietf.org/html/rfc5476#section-6.5
